The sample was forwarded to the United States Customs and Border Protection laboratory for analysis. The product, “dill relish,” is said to consist of 93-98 percent diced gherkins, 1-5 percent, each, of water, salt, and acetic acid, and less than one percent, each, of capers, xanthan gum, calcium chloride, potassium sorbate, and spice extractives with polysorbate 80. Laboratory analysis found the sample contained 1.19 percent acetic acid. The gherkins will be imported in packages ranging from 5-gallon pails to 2250-lb bulk totes.

A sample and ingredients list were submitted with your letter. The sample was forwarded to the United States Customs and Border Protection laboratory for analysis. The product, “dill relish,” is said to consist of 93-98 percent diced gherkins, 1-5 percent, each, of water, salt, and acetic acid, and less than one percent, each, of capers, xanthan gum, calcium chloride, potassium sorbate, and spice extractives with polysorbate 80. Laboratory analysis found the sample contained 1.19 percent acetic acid. The gherkins will be imported in packages ranging from 5-gallon pails to 2250-lb bulk totes.
